We stayed at Hilton Mahogany Bay Resort & Beach Club for five nights for my birthday, and it ended up being one of my favorite hotel stays ever. It’s part of Hilton’s Curio Collection, but it doesn’t feel like a cookie-cutter chain hotel. It’s got this laid-back, village-style vibe—plus there’s an owners club where people can purchase condos (and customize them) to live in or rent out. Basically: resort comfort, but with “I could totally live here” energy.
To get to San Pedro, (AKA – Ambergris Caye) you’ll typically fly into a larger city first, then take a short hopper plane over. I’d never done that before and was a little nervous, but it was totally fine.
Once you land, there’s a bit of a process to grab your bags, but here’s the move: email the concierge ahead of time and have them arrange transportation. We did, and it made everything smooth—straight into a nice, air-conditioned car and off we went.
Check-in was easy and welcoming. We were offered drinks right away (yes please), and the front desk staff was genuinely kind. They noticed it was my birthday and surprised us with an upgrade to a 3-bedroom cottage.
At the time, I was only Hilton Gold, so I wasn’t expecting anything extra—so I was thrilled. They took us to the condo by golf cart, and the concierge brought our luggage in.
Y’all. This place was massive.

What really got me was how livable it felt. This wasn’t just a place to crash between excursions—it felt like a full-on beach home. There was room to spread out, unpack, and actually settle in without tripping over suitcases or doing that awkward “sorry—excuse me—let me squeeze by you” dance every five minutes.
The cottage had this airy, open feel that made everything brighter and calmer the second you walked in—especially in the evenings when the breeze rolled through. We’d pour a drink, kick our shoes off, and just exist for a minute—no rushing, no noise, no agenda.
There was a second bathroom that hosted more of an open shower experience, which my husband loved. The kitchen was the perfect size for a delicious Sunday dinner with the family. But what I loved the most about this condo was that both the larger bedrooms and the living room had full-open doors!
Mahogany Bay only has one main restaurant on-site, but the real fun is their Village—a little cluster of vendors with lots of options.
My favorite by far was The Taco Shack. It’s a small hut with the most delicious, authentic Belizean food. Orlando (the owner) and his wife are the sweetest, and they’ve clearly been doing this a long time—because every bite was right.
We ate there at least once a day (and I would’ve happily eaten there for every meal with zero complaints).

We also grabbed snacks from the hot dog and sandwich spots, and the coffee shop near our cottage was perfect for morning fuel.
We booked the Romance Package, which included 60-minute massages, and we scheduled everything through the front desk.
These massages were that good. Deep tissue, but not the kind that leaves you feeling attacked. She found knots I didn’t even know existed and had me floating afterward. If you’re going to Belize, you might as well lean all the way into relaxation.
The absolute best part of Mahogany Bay is the private island.
You take a short boat ride over (and the views are a bonus), and once you’re there… it’s pure vacation mode. They have daybeds in the water, and if you book one you get food + beverage service.
We spent the whole day out there with our JBL speaker, strong cocktails, good food, and sun-soaked bliss. It was the perfect birthday day—no notes.
Absolutely. If you’re headed to San Pedro, Belize, I 100% recommend Mahogany Bay—especially if you want a resort that feels relaxing, friendly, and a little more unique than the typical beachfront mega-hotel.
And price-wise? It’s more budget-friendly than you’d expect for Curio Collection. We paid just over $1,000 for five nights, and for the service + amenities we got, I would’ve easily paid more.
